Jauma
Adelaide Hills, Australia
With over a decade of experience, James Erskine and his family run Jauma. Over the years, they have gained a reputation for producing some of Australia's most exceptional and delicious wines. Founded in 2010, after leaving his career as a sommelier, James' focus is on crafting wines from McLaren Vale, using an all-organic approach. Only using wild yeasts for fermentation with minimal manipulation and additions, with the exception of a small amount of sulphur before bottling. His philosophy is to create expressive, unique wines that capture the sense of place, without extraction or heavy-handedness in the winery. The team also planted Chenin Blanc, Savagnin, Cabernet Franc, and Gewürztraminer grapes in an old cherry orchard in Adelaide Hills, which has been certified organic for over a decade. James' winemaking style is difficult to pigeon-hole, as he always manages to blur the line between 'fun wine' and 'fine wine', producing wines that are elegant and well-made, yet also interesting and fun. It's worth noting that all Jauma wines are bottled under crown seal, whether still or sparkling. James prefers this method of bottling as it allows for slower aging and he prefers the visual aesthetic of these caps to screwcaps.
