Made from hand-harvested Chenin grapes from old vines and fermented spontaneously with indigenous yeasts in fiberglass tanks using the Méthode Ancestrale. It's drier than the "I Wish I Was A Ninja" as Craig believes Chenin has more depth when it's drier.
