Hand-harvested and de-stemmed Cinsault grapes were fermented on skins for 10 days using indigenous yeasts in open-top stainless steel vats. The grapes come from Rick Mcgrindle's 3-hectare block of organic bush vines planted in 1981, known for their delicate, large-sized and thin-skinned grapes.
