Made from 100% Vinyater, a rare and nearly forgotten local variety, sourced from a single vineyard over 60 years old on clay-limestone soils. Direct-pressed with stems and naturally fermented, it rests on the lees for a minimum of 3 months before bottling. No fining, filtration or added SO2.
