Made from Sumoll, an extremely rare white wine variety in Catalonia that has seen declining plantings due to low yields despite its excellent quality potential. After spontaneous fermentation and a brief skin contact, it ages in steel for 8-12 months before being bottled without any fining, filtration or added SO2.
