Nestled in the heart of a twelve-hectare organic vineyard, Pago de Tharsys benefits from ideal conditions to yield the finest grapes. The vineyards sit 800 meters above sea level on predominantly limestone soils. This gives extra freshness, elegance and longevity to the wines.
There is also a focus on biodiversity with the vineyard intermingled with olive and almond tress. Completely family-runned, they are renowned for long-aging cavas and introducing innovative wine styles. The underground winery dates back to 1808 and is excavated in the limestone bedrock that characterizes this property. It is in this underground cellar where the cavas are aged.
Pago de Tharsys proudly produces wines under "Vino de Pago" D.O. Utiel-Requena and D.O. Cava designations. Their commitment to "Bobal," an indigenous varietal, defines their identity. Widely acclaimed as a top Cava producer, Pago de Tharsys and owner Vicente Garcia are hailed as leaders in Valencian Cava.
