Bourgogne Rouge Cuvee L'Ermitage
Pinot Noir Blend
A blend of 85% Pinot Noir and 15% César. Grapes are harvested by hand and partially destemmed. Fermentation occurs only using native yeasts and goes on for about 10 days. It is then raised in barrel for 9 months being being bottled unfiltered.
