A blend of 90% Pinot Noir, 5% Syrah and 5% Petit Verdot. Grapes are manually harvested with a mixture of destemmed and whole bunches. Grapes are left to macerate for 5-12 days on skins. 10% of the grapes undergo carbonic maceration, 25% are whole bunch fermentation only using native yeasts. The wine is then left to mature in vessel for 9 months. No filtration or fining.
