Palmento Bianco is a field blend of organically grown, indigenous Sicilian white grapes, mainly grown high on the northern slopes of Mt Etna, Sicily. The Catarratto, Insolia and Grillo grapes were harvested first, and whole bunch pressed immediately into stainless steel. The Grecanico grapes, along with small quantities of Minnella Bianca and Carricante were harvested later. Half of these grapes were macerated on skins. Alcoholic fermentation was spontaneous and proceeded without temperature control. The various fermenting musts were blended. The finished wine underwent malolactic fermentation and remained on light lees for 5 months before it was bottled without fining or filtration.
