100% Gamay
Gamay made from over-matured, raisiny grapes from 90-year-old vines and planted on granitic soils. Grapes are hand-harvested once slightly over-ripe and shrivelled, handled with respect to preserve the indigenous yeasts. Natural vinification, carbonic maceration for 3 weeks and maturation for 9 months in barrels. Bottled unfiltered and no sulphur added.
