Chablis 1er Cru Cote De Lechet
100% Chardonnay
The soils at Cote de Lechet are made up of stony grey marl with bands of limestone. Grapes were mechanically harvested and were transferred into the cellar by gravity. It undergoes a gentle pressing in pneumatic presses and left to cold settle for 12 hours. It is then fermented using selected yeasts in thermo-regulated stainless steel vats. The wine then undergoes malolactic fermentation with ageing on lees for between six months and one year. 20% of the wine went through this process in new barrels. It is then bottled with slight filtration but no fining.
