The Binner family have been winegrowers since 1770 in the "pocket of Colmar" in Ammerschwhir. The 11 hectares are run by the family. The production of 50,000 bottles per year in biodynamic viticulture justifies a large staff: the Binner family has always chosen quality over quantity. Environmentally friendly viticulture, vines treated with natural phytosanitary products, severe sorting of the grapes after manual harvesting reduce the yields (45 hl/ha compared to the 88 hl authorized in the appellation). The vinification is just as serious (no inputs, no sulphur, except in special cases) and little filtration, maturing in century-old tuns for a minimum of 11 months. The Ecocert label in 2005 rewarded their efforts and today the vines are enjoying their health capital. The Riesling, Pinots Blanc, Pinot Gris, Pinot Noir, Gewürtztraminer or Muscat grapes benefit from an exceptional amount of sunshine on the slopes (up to 60% slope), most of which are south/south-east facing, and flourish on the granite soils of Hinterberg, the Schlossberg, Wineck Schlossberg and especially Kaefferkopf Grands Crus.
