Grapes were produced from estate vineyards in the Vittoria region at 300 meters elevation. All grapes were hand-harvested with vines averaging 15 years of age. Spontaneous fermentation in concrete tanks on the skins with indigenous yeast. The wine then spends 9 months in concrete vats followed by 3 months in the bottle before release.
