A blanc de noir from Aleatico grapes planted 450 meters above sea level on the volcanic slopes of Lake Bolsena, the biggest volcanic lake in Europe. Grapes are manually harvested, whole bunch. Spontaneous fermentation takes place in small cement barrels with indigenous yeast. The wine is then matured in cement for 6 months and an additional 2 months in bottle. No chemical additives with tiny amounts of sulphur added at bottling
