100% Aleatico

Aleatico grapes planted 450 meters above sea level on the volcanic slopes of Lake Bolsena, the biggest volcanic lake in Europe. Grapes are manually harvested and destemmed. They are left to macerate for 15 days. Spontaneous fermentation takes place in small cement barrels with indigenous yeast. The wine is then matured in cement for 18 months and an additional 2 months in bottle. No chemical additives with tiny amounts of sulphur added at bottling
