100% Nero d’Avola

Grapes are hand-harvested from sub-appenine sands of calcareous nature. It is then pressed and allowed to ferment with indigenous yeasts along with a 25 day maceration on skins. The wine is the allowed to age for 22 months in 25HL Slavonian oak barrels followed by 2 months in bottle. No filtration is performed.
